ZUCCHINI WALNUT BREAD

2 C white sugar

1 C canola oil

3 eggs

2 tsp vanilla

3 C flour

1 tsp. soda

¼ tsp baking powder

1 tsp cinnamon

1 tsp grated lemon rind

2 C shredded zucchini

1 C chopped walnuts

Beat the sugar, oil, eggs and vanilla until well blended.  Combine the dry ingredients & lemon rind and gradually beat into sugar mixture.  Fold in the zucchini and walnuts.  Spread the batter in 2 prepared 8X4ʺ loaf pans and bake at 350°F for 55 – 65 minutes.
