
12 C chopped zucchini (unpeeled)
5 tbsp. coarse salt
4 C chopped onions
1 green pepper, seeded & chopped
1 red pepper, seeded & chopped
2 ½ C vinegar
6 C white sugar
1 tbsp. dry mustard
1 ½ tsp celery seed
½ tsp. pepper
¾ tsp turmeric
Combine the zucchini, salt and onions in a glass bowl and let stand overnight. The next day, rinse and squeeze out the excess water. Add all of the remaining ingredients and cook over a medium heat for 30 minutes (stirring often). Bottle while hot.
