ZUCCHINI NUT BREAD

2 C white sugar

1 C canola oil

3 eggs

2 tsp vanilla

3 C flour

1 tsp. soda

¼ tsp baking powder

1 tsp cinnamon

1 tsp grated lemon rind

2 C shredded zucchini

1 C chopped walnuts

Beat the sugar, oil, eggs and vanilla until well blended.  Combine the dry ingredients and lemon rind and gradually beat into sugar mixture.  Fold in the zucchini and walnuts.  Spread the batter in 2 prepared 8X4ʺ loaf pans and bake at 350°F for 55 – 65 minutes.
