4 large potatoes, cooked & mashed
1 C cottage cheese
½ C sour cream
¼ C soft butter (first amount)
¼ C parmesan cheese
2 tbsp. melted butter (second amount)
Salt & pepper to taste
Combine the potatoes, cottage cheese, sour cream and the ¼ C butter and beat until very smooth. Add the salt & pepper. Spread in a baking dish. Sprinkle with the parmesan cheese and drizzle with the melted butter. Bake at 400°F for 30 minutes.
