Mix together the butter and sugar and add the egg and beat well. Stir in the vanilla. Combine the flour and baking powder and stir into the creamed mixture. Drop by spoonful onto parchment lined cookie sheets and pat down with a fork. Bake at 400°F for 5 – 7 minutes or until brown. These cookies can be eaten on their own or they can be put together with jam or a date filling.
