
½ C butter
¾ C white sugar
1 tsp. vanilla
1 egg
1 ½ C flour
½ tsp. baking powder
1 tsp. baking soda
¾ C mashed banana
¾ C crushed pineapple, drained
Mix the butter and white sugar together. Add the egg and vanilla. Combine the flour, baking powder & baking soda and add to the butter mixture. Fold in the bananas and pineapple. Mix just until blended. Place batter into greased muffins tins. Bake at 350°F for about 25 minutes.
