
½ C butter
¾ C white sugar
1 tsp. vanilla
1 egg
1 ½ C flour
½ tsp. baking powder
1 tsp. baking soda
¾ C mashed banana
¾ C crushed pineapple, drained
Mix the butter and sugar together. Add the eggs and vanilla and mix. Combine the dry ingredients and add to the creamed mixture. Fold in the mashed banana and pineapple. Mix just until blended. Spoon the batter into prepared muffin tins. Bake at 350°F for about 25 minutes.
