2 C flour

2 tsp. baking powder

1 tsp. baking soda

½ C shredded coconut

½ C brown sugar

1 egg

1 C milk

1 C mashed banana

¼ C melted butter

2 tsp. vanilla

1 250 ml can crushed pineapple, drained

Combine the flour, baking soda, baking powder and half of the coconut.  In another bowl, whisk together the sugar, egg, milk, banana, butter and vanilla & stir in the pineapple.  Pour into the dry ingredients and stir just until moistened.  Spoon the batter into greased muffin tins and sprinkle the tops with the remaining coconut.  Bake at 350°F for about 25 – 30 minutes.
