TRADITIONAL IRISH STEW

2 large onions
4 large carrots
8 large potatoes
1 lb stewing beef (lamb can also be used)
salt & pepper to taste

Cut the onions, carrots and potatoes into desired size.  Cut the meat into small pieces.  Place potatoes and meat into large pot, fill with water and bring to a boil.  Then, add carrots and onions.  Keep on a low boil and stir occasionally until the meat and vegetables are cooked.  The cooking time is about 1 hour.
