
2 medium tomatoes, sliced
1 medium zucchini, thinly sliced
1 green onion, sliced
2 tbsp. parmesan cheese
Salt & pepper to taste
In a shallow casserole, layer tomato and zucchini sliced in an overlapping circle. Top with onion slices. Sprinkle with cheese, salt & pepper. Bake at 350°F for about 20 minutes or until vegetables are just tender.
