
2 potatoes
1 sweet potato
4 hardboiled eggs, chopped
2 stalks celery, chopped
½ onion, chopped
¾ C mayonnaise
1 tbsp prepared mustard
1 tsp salt
1 tsp pepper
Cook the potatoes until tender, but still firm. Drain, cool, peel and chop.
Combine the potatoes, eggs, celery and onion. Whisk together the mayonnaise, mustard, salt & pepper. Add to the potato mixture and toss well to coat. Refrigerate.
