STRAWBERRY–RHUBARB–APPLE PIE

1 C rhubarb, diced

1 C strawberries, sliced

2 apples, sliced

2 tbsp. flour

1 C white sugar (divided)

¼ C brown sugar

1 tsp cinnamon

2 tbsp. flour (second amount)

3 tbsp. melted butter

Line a 9” pie plate with pastry.  Combine ½ C white sugar and 1 tbsp. flour and sprinkle over the pastry.

Place diced rhubarb in the pie shell and sprinkle with ¼ C white sugar and place sliced strawberries over the rhubarb and sprinkle with ¼ C white sugar and then top with a layer of sliced apples.

Combine brown sugar, cinnamon, 2 tbsp. flour and melted butter and sprinkle over the apples.  Top with crust. Bake at 350°F for 40 – 50 minutes.
