1 baked pie shell, cooled


1 pkg. (8 oz.) cream cheese

¾ C icing sugar

2 tsp grated lemon rind

½ tsp lemon extract


6 C fresh strawberries, hulled

¾ C white sugar

1 tbsp. cornstarch

¼ tsp salt

1 C water

1 pkg. (3 oz.) strawberry gelatin

1 tsp butter

Beat the cream cheese, icing sugar, lemon rind & lemon extract together.  Spread over the bottom of the pie crust.  Refrigerate.

Place strawberries in a large bowl.  In a small saucepan, combine sugar, cornstarch, salt & water until blended and bring to a boil over a medium heat, stirring constantly.  Cook and stir for about 1 – 2 minutes or until thickened and clear.  Remove from heat and add the gelatin, stirring until dissolved.  Stir in butter.  Pour over the strawberries.  Arrange strawberries over the pie filling.

Refrigerate for about 4 hours or until set.
