
Base:
2 C flour
½ C white sugar
2/3 C butter
Combine the flour & sugar and cut in the butter until crumbly. Press the crumbs into a prepared 13X9ʺ pan. Bake at 350°F for 15 – 20 minutes. Remove from oven and cool.
Filling:
2 (250 g) pkges cream cheese
¾ C white sugar
2 eggs
1 tbsp. lemon juice
1 C strawberry jam
1 C strawberries, chopped
Beat the cream cheese and sugar together until smooth. Add the eggs and lemon juice and beat until smooth. Spread the jam over the base and sprinkle with the chopped strawberries. Pour the cream cheese mixture over the strawberries. Bake at 350°F for 25 – 30 minutes. Cool completely before cutting into squares.
