½ C sour cream
3 tbsp white vinegar
1 tbsp white sugar
Salt & pepper to taste
4 medium cucumbers, sliced thinly – not peeled
1 small sweet onion, thinly sliced & separated into rings
Whisk together the sour cream, vinegar, sugar, salt and pepper until well blended. Add cucumbers and onion and toss to coat. Refrigerate, covered, for at least 4 hours.
