SCALLOPED TOMATO CASSEROLE

28 oz. can tomatoes

1 small onion, finely chopped

1 stalk celery, finely chopped

2 tbsp. butter

1 tbsp. white sugar

1 C coarse bread crumbs

2 tbsp. flour

¼ tsp. salt

 

Melt the butter and add the flour and juice from the tomatoes.  Cook until thickened.  Combine the tomatoes, onion, celery and sugar to the butter mixture.  Mix well and placed in a greased casserole.  Sprinkle the bread crumbs over the top of the mixture.  Bake at 375°F for 30 minutes.
