
8 C ripe tomatoes, peeled and coarsely chopped
8 jalapeno peppers, chopped
2 C onions, chopped
3 C sweet peppers (red, green & banana) chopped
156 ml can tomato paste
¾ C white vinegar
1 tbsp. salt
½ C chopped fresh parsley or cilantro
½ tsp ground cumin
Combine all the ingredients and bring to a boil. Boil gently until the mixture reaches desired consistency. Bottle and seal.
