
4 C peeled, chopped tomatoes
2 C chopped green peppers
2 C chopped sweet red peppers
1 C chopped onions
1 or 2 seeded jalapeno peppers
¾ C cider vinegar
2 cloves garlic, minced
1 tbsp. white sugar
1 tbsp. salt
1 tsp. paprika
1 tsp. oregano
6 oz. can tomato paste
¼ C chopped cilantro
Combine the first 11 ingredients and bring to a boil. Reduce heat and simmer, uncovered, for 1 hour or until thickened. Stir in the last 2 ingredients and simmer for 5 minutes longer. Pour into jars, leaving 1/4ʺ head space and seal. Process in boiling water for 30 minutes.
