ROASTED POTATO SALAD
4 C quartered or cubed small red potatoes
1 C mayonnaise
4 slices bacon, crisply cooked & chopped
2 hard cooked eggs, chopped
¼ C chopped green onions
¼ tsp. salt
¼ tsp. pepper
Place the potatoes on a large baking sheet and bake for 30 – 35 minutes at 425°F or until the potatoes are tender & golden brown, stirring once.  Combine the mayonnaise, bacon, eggs, onions, salt & pepper in a large brown.  Stir in the potatoes and mix lightly.  Serve either warm or chilled.
