RHUBARB CRISP

¾ C white sugar

3 tbsp. cornstarch

3 C sliced rhubarb (fresh or frozen)

2 C apples, peeled & sliced

1 C rolled oats

½ C brown sugar

½ C melted butter

1/3 C flour

1 tsp. cinnamon

Combine the white sugar and cornstarch.  Add the rhubarb and apples and toss to coat.  Spoon into a prepared baking dish. Combine the rolled oats, brown sugar, butter, flour and cinnamon until the mixture resembles coarse crumbs.  Sprinkle over the fruit.  Bake at 350°F for 45 minutes or until bubbly and the fruit is tender.  Serve warm with vanilla ice cream.
