RHUBARB CAKE

3 C diced rhubarb

½ C butter

1 ½ C white sugar

1 egg

1 C sour milk

2 C flour

1 tsp. baking soda

Topping:

¼ C white sugar

½ tsp. cinnamon

½ C chopped walnuts

Combine the topping ingredients and set aside.

Cream the butter & sugar and beat in the egg.  Combine the flour and baking soda.  Add the dry ingredients alternately with the sour milk.  Fold in the rhubarb.  Spread the batter in a prepared 13X9ʺ pan and sprinkle with the topping.  Bake at 350°F for 45 minutes.
