2 C white sugar

2 C pumpkin

1 ¼ C canola oil

4 eggs

2 C flour

2 tsp. cinnamon

2 tsp. baking soda

2 tsp. baking powder

½ C coconut

½ C raisins


¼ C butter

1 pkg. (125g) cream cheese

1 tsp. vanilla

2 C icing sugar

Cake: Beat together the sugar, pumpkin, oil and eggs.  Combine the remaining ingredients and slowing add to the pumpkin mixture.  Spread the batter in a prepared 13X9ʺ pan and bake at 350°F for 35 – 40 minutes.

Icing: Beat the butter and cream cheese together.  Gradually add the vanilla and icing sugar.  Spread on the cooled cake.

    I made this delicious Pumpkin cake, It’s delicious.
    The grandkids just love it & I have lots of little pumpkins to use.
