6 medium potatoes
3 C chicken broth
3 C milk
3 tbsp. flour
3 tbsp. butter
1 small onion, finely chopped
Salt & pepper
Boil the potatoes in the chicken broth until tender and then add the milk and let simmer. In a stockpot, brown the flour and butter at a low heat, stirring constantly. Stir in the onions and cook until soft. Add the potatoes and stir until thick. Season with salt and pepper to taste.
