POTATO LEEK SOUP

2 lbs. potatoes

3 leeks, white part only

1 stick celery

2 cloves garlic

1 tsp. thyme

1 tsp. pepper

Salt to taste

4 C chicken broth

1 C water

1 can evaporated milk

1 C shredded cheddar cheese

Place all ingredients (except the milk & cheese) into a stockpot and cook until soft.  Add the milk and cheese.  Cream together and serve with bacon bits sprinkled over the soup.
