POTATO CHIVE SOUP

½ C butter, cubed

1 medium onion chopped

2 ½ C mashed potatoes (with added milk & butter)

4 C chicken broth

1 C half & half

½ C minced fresh chives

In a large saucepan, melt the butter over a medium heat. Add the onion and cook until crisp tender. Add the chives and cook for 2 minutes. Remove from the heat. Stir in the broth and potatoes. Process small batches in blender until smooth. Return to pan and stir in cream. Heat through, but do not boil.
