POTATO BALLS
2 C mashed potatoes
1 egg, slightly beaten
1 clove garlic, crushed
Salt & pepper, to taste
Finely minced parsley
Coating:
2 C crushed cornflakes
Cheddar cheese cubed  (¼ʺ in size)
Combine the potatoes, egg, garlic, salt, pepper & parsley together and mix well.  Form into small balls and push a cheese cube into the centre and roll again.  Roll the balls in the crushed cornflakes and place on parchment lined cookie sheets and bake at 375°F for 20 minutes or until lightly browned.
