CAULIFLOWER SOUP

2 tbsp. butter

½ C chopped onions

3 C chopped cauliflower

2 C chicken broth

½ C flour

3 C milk

1 ½ C shredded cheese


Melt the butter in a large saucepan and add the onion and sauté until clear. Add the chicken broth and cauliflower. Bring to a boil and reduce the heat and simmer for 15 – 20 minutes. Mix the flour and 1 C milk together and add to the cauliflower mixture and add the remaining 2 cups of milk. Cook over a medium heat until the mixture boils and thickens. Add the cheese about 5 minutes before serving.
