PIZZA SOUP

1 tbsp. canola oil

½ mushrooms, sliced

1 onion, chopped

¼ C chopped green or red pepper

2 large cans stewed tomatoes

8 ounces pepperoni, sliced

1 C beef broth

½ tsp. dried basil

1 C mozzarella cheese, shredded

Heat oil in a saucepan.  Stir in the onions, mushrooms and pepper until soft, but not brown.  Add the tomatoes, stock, pepperoni and basil.  Cook until heated through.  When serving, sprinkle cheese over each bowl.
