2 tsp. baking soda

2 C flour

1 C white sugar

2 eggs

½ tsp. vanilla

20 oz. can crushed pineapple


8 oz. cream cheese

½ C butter

½ tsp. vanilla

1 ½ C icing sugar

1 C pecans

Cake: combine all of the cake ingredients and mix well.  Pour into a greased 13 X 9ʺ pan and bake at 325°F for about 40 minutes.  Ice when cooled.

Icing: blend the cream cheese, butter and vanilla.  Add the icing sugar and mix until smooth.  Add the pecans and spread over the cooled cake.
