4 – 6 tomatoes, halved lengthwise

½ C bread crumbs

2/3 C shredded Parmesan cheese

3 tbsp. chopped parsley

1/3 C extra virgin oil

Salt & pepper to taste

Place the tomatoes on a baking sheet cut side up.  Combine the bread crumbs, Parmesan cheese, parsley, olive oil, salt & pepper and mix well.  If the mixture is too dry, add a little more olive oil.  Top each tomato with a tablespoon of the Parmesan mixture, mounding it up on top of the tomato.  Place the tomatoes under the broiler and broil until the cheese is melted and the topping is lightly browned about 3 – 5 minutes.
