MONTEREY JACK POTATO BAKE

8 slices bacon

2 lbs potatoes, peeled & cut into ½ʺ cubes (about 6 potatoes)

1 large onion, chopped

1/3 C red pepper, diced

1/3 C green pepper, diced

Salt & pepper to taste

1 C Monterey Jack cheese

Cook bacon until crisp, drain and chop. Combine the bacon, potatoes, onion and peppers. Sprinkle with salt, pepper & cheese. Place in a greased casserole, cover with foil and bake at 350°F for about 1 hour or until tender. Remove foil and place until broiler to brown the top.
