2 C white sugar
1 ¾ C flour
¾ C cocoa
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
2 eggs
1 C coffee
1 C buttermilk
½ C canola oil
1 tsp. vanilla
Icing sugar (for topping)
Combine the sugar, flour, cocoa, baking soda, baking powder and salt. Add the eggs, coffee, buttermilk, oil and vanilla. Beat together for about 2 minutes (batter will be very thin). Pour the batter into a greased bundt pan. Bake at 350°F for about 45 – 50 minutes. Cool for 10 minutes before removing from pan. When completely cooled, dust with icing sugar.
