MOCK DUCK

1 ½ lbs. round steak

Stuffing:

1 ½ C bread crumbs

1 tsp. chopped parsley

1 tsp. savory

½ tsp. salt

1/8 tsp. pepper

1 tbsp. chopped onion

1 ½ tbsp. melted butter

Pound the steak to flatten it.  Combine the stuffing ingredients spread over the meat, but not quite to the edges.  Carefully roll up and tie.  Place in roasting pan. Then melt 2 tbsp. butter in 1 C boiling water and pour over and around the steak roll.  Cover tightly and bake at 250°F for 3 ½ hours.  Remove from pan and place on preheated platter and cover with gravy.
