
1 unbaked pie shell
Pie:
30 Ritz crackers
2 C water
1 C white sugar
2 tsp cream of tartar
½ tsp cinnamon
1 tbsp lemon juice
Crumb topping:
1 C finely rolled Ritz crackers crumbs (takes about 25 crackers)
½ C brown sugar
½ tsp cinnamon
1/3 C melted butter
Combine the water, sugar and cream of tartar and bring to a boil. Drop in the whole Ritz crackers and boil for 5 minutes. Remove from heat and pour into the pie shell. Sprinkle with the cinnamon and lemon juice. Combine the ingredients for the topping and sprinkle of the pie. Bake at 425°F for 15 minutes. Then, reduce heat to 350°F and continue to bake for another 20 minutes. Serve warm with vanilla ice cream.
