MOCHA PUDDING

Pudding:

1 ½ C flour

2 ½ tsp. baking powder

½ tsp. salt

2 tsp. coffee

6 tbsp. butter

1 egg, well beaten

1/3 C milk

½ tsp. vanilla

½ C white sugar

Sauce:

1 C brown sugar

2 C boiling water

1 tbsp. butter

½ tsp. vanilla

Pudding: combine the dry ingredients and set aside.  Cream the butter and stir in the sugar and the egg and mix well.  Combine the milk and vanilla & add to the creamed mixture alternately with the dry ingredients.  Place the batter in a greased casserole dish.

Sauce: combine all the ingredients and pour over the batter.

Bake at 350°F for 35 – 40 minutes.
