MINTY WATERMELON CUCUMBER SALAD

8 C watermelon, seeded & cubed
2 medium English cucumbers, halved lengthwise & sliced
6 green onions, chopped
¼ C fresh mint, chopped
¼ C red wine vinegar
¼ C olive oil
½ tsp. salt
½ tsp. pepper

In a large bowl, combine the watermelon, cucumbers, green onions and mint.  In a small bowl, whisk together the remaining ingredients.  Pour over the salad and toss to coat.  Serve immediately or it can be refrigerate (covered) for 2 hours.
