½ C chopped onion
4 C canned tomatoes
2/3 C sliced mushrooms
2 tbsp. olive oil
¼ C chopped parsley
2 – 8 oz. cans seasoned tomato paste
1 lb. ground beef
1 ½ tsp. oregano
1 C water
2 cloves minced garlic
1 tsp. salt
1 bay leaf
In a large skillet, cook the onion in hot oil until almost tender. Add the meat and garlic and brown lightly. Add the remaining ingredients. Simmer uncovered 2 – 2 ½ hours or until the sauce is thick, stirring occasionally. Remove the bay leaf. Serve hot over spaghetti.
