MARSHMALLOW SQUARES

Base:

2 ¼ C flour

1 1/8 C butter

½ C brown sugar

Topping:

1 ½ envelopes unflavoured gelatin

1 1/8 C cold water

Pinch of salt

1 1/8 C icing sugar

1 1/8 tsp. baking powder

¾ tsp. almond flavouring

1 ½ tsp. lemon juice

A few drops red or green food colouring

¾ tsp. vanilla

Desiccated coconut

Base: combine the flour, brown sugar and butter together and mix until crumbly.  Press into a 9X13ʺ pan and bake at 325°F for 20 minutes until set and a pale brown.

Topping: Measure the water in a saucepan.  Sprinkle gelatin over the water and let stand for 5 minutes.  Add the sugar and salt, bring to a boil over a medium heat, stirring constantly.  Remove from heat and add the icing sugar. Cool until starting to gel.  Then beat until foamy.  Add the baking powder, vanilla, almond extract, lemon juice and food colouring.  Beat at a high speed until thick enough to stand in peaks.  Pour the mixture over the base.  Sprinkle with coconut.  Cool until the gloss disappears.
