MAPLE SYRUP PIE

1 ½ C maple syrup

1 C water

3 eggs, separated

2 tbsp. butter

1 tsp. salt

4 tsps. cornstarch

1 9ʺ baked pie shell

In a double boiler or heavy saucepan, heat the maple syrup and water.  Beat the egg yolks & add to the syrup.  Fold the cornstarch into the hot syrup and cook until thickened.  Remove from heat & add the butter & salt and mix.  Pour into the pie shell and cover with meringue.

Meringue: beat the egg whites until stiff.  Add 3 tbsp. white sugar.  Pile onto the pie and brown lightly.
