MAPLE RICE PUDDING

2/3 C uncooked rice

1 ½ C milk

2/3 C maple syrup

2 eggs

Dash of salt

¼ tsp. nutmeg

½ C raisins

Cook the rice until tender.  Combine the milk, maple syrup, egg, salt & nutmeg and blend together with a whisk.  Add the rice and raisins and turn into a buttered casserole.  Place the casserole in a pan of water and bake at 350°F for 1 hour or until set.
