2 C maple syrup
½ C butter, at room temperature
2 eggs
1 tsp. baking powder
½ C milk
2 C 35% cream
½ C white sugar
2 C flour
Pinch salt
Combine the maple syrup and cream in a saucepan and boil for 3 – 4 minutes. In a bowl, beat the butter and sugar until smooth. Add the eggs and mix for 2 minutes. In another bowl, combine the flour, baking powder and salt. Stir the dry ingredients into the butter mixture, alternating with the milk. Butter a baking dish and spread the batter in the dish. Pour the maple syrup – cream mixture over the batter. Bake at 400°F for 30 minutes or until the cake is golden brown. Serve warm topped with whipped cream.
