
LEMON SQUARES
Base:
1 C butter, softened
1 ½ C icing sugar
2 C flour
Filling:
1 ¾ C white sugar
4 eggs
6 tsp. lemon juice
5 tbsp. flour
½ tsp. baking powder
Base: mix together the butter, icing sugar and flour. Press into a 13X9ʺ pan and bake at 250°F for 15 minutes.
Filling: combine the sugar, eggs, lemon juice, flour & baking powder and mix well. Pour over the crust and bake at 250°F for 20 minutes.
