Crust:
1 C soft butter
1 ½ C icing sugar
2 C flour
Combine the butter, icing sugar and flour & mix well. Press into the bottom of a 13X9” baking pan. Bake at 250°F for 15 minutes.
Filling:
1 1/3 C white sugar
4 eggs
6 tsp lemon juice
5 tbsp flour
½ tsp baking powder
Mix the sugar, eggs, lemon juice, flour and baking powder together. Pour over the baked crust and bake at 350°F for an additional 20 minutes.
