
1 unbaked pie shell
2 tbsp. flour
1 tbsp. butter
2 egg yolks
1 C white sugar
Juice & rind of 1 lemon
1 C milk
2 egg whites
Combine flour, butter, egg yolks, sugar, lemon juice, lemon rind and milk together & mix well. Beat the egg whites and gently fold into the batter. Pour into the pie shell and bake at 400°F for 10 minutes and reduce the heat to 325°F and bake until the filling is set.
