LEMON POPPYSEED MUFFINS

2 lemons

1 ¼ C white sugar

3 C flour

3 tsp. baking powder

1 tsp. baking soda

3 tbsp. poppyseeds

1 egg

1 ¼ C milk

¼ C melted butter

Grate the peel & squeeze the juice of the lemons.  Measure ½ C juice and the peel together and stir in the milk, egg and melted butter.  Note: the milk will curdle.  Combine the dry ingredients and stir in the milk mixture and stir only until the dry ingredients are wet.  Spoon the batter into greased muffin tins and bake at 350°F for 20 – 25 minutes.
