Base:
1 ¾ C Graham wafer crumbs
½ C white sugar
¾ C butter
¾ C flour
½ C coconut
Filling:
½ C white sugar
1 egg
1 lemon, juice & rind
½ C coconut
Base: combine the Graham wafer crumbs, sugar, butter, flour and coconut and mix until crumbly. Press half of the crumbs into an ungreased 9″ pan. Set aside the remaining crumbs.
Filling: in a double boiler, combine the sugar, egg, grated lemon rind, lemon juice and coconut. Cook until the mixture is thickened. Remove from heat and pour over the base.
Sprinkle the remaining crumbs over the filling and press down slightly with your fingers. Bake at 350°F for about 30 minutes or until set. Cut into squares when cooled.
