LEMON CAKES

½ C butter, room temperature

1 C white sugar

2 C flour

4 tsp. baking powder

½ C milk

½ tsp. almond extract

1 tbsp. lemon zest

4 egg whites

Cream the butter and gradually stir in the sugar.  Combine the flour and baking powder and add to the creamed mixture.  Stir in the milk.  Whisk the egg whites until frothy and stir into the batter along with the lemon zest.  Pour the batter into muffin tins and bake at 350°F for about 20 minutes.  Remove from tins, let cool and sprinkle with icing sugar.
