
½ C butter
1 C white sugar
2 eggs
½ C milk
1 ½ C flour
1 tsp baking powder
¼ tsp salt
2 tbsp. lemon juice
1 tbsp. grated lemon rind
Cream butter and sugar together. Add eggs, one at a time and mix well. Stir in lemon juice. Combine flour, baking powder and salt. Add the dry ingredients alternately with the milk. Stir in the lemon rind. Place batter in a greased loaf pan. Bake at 350°F for about 50 minutes.
Topping:
¼ C white sugar
¼ C lemon juice
Combine the sugar and lemon juice and drizzle over the bread when it is removed from the oven.
