LEMON BLUEBERRY BREAD
1/3 C melted butter
3 tbsp. lemon juice
1 C white sugar
2 eggs
½ C milk
1 ½ C flour
½ tsp. salt
1 tsp. baking powder
2 tbsp. grated lemon rind
1 ½ C blueberries
Glaze:
2 tbsp. lemon juice
¼ C white sugar
Combine the butter, sugar, juice & eggs and mix well. Combine the flour, baking powder and salt and add to the butter mixture alternately with the milk. Fold in the lemon rind and blueberries. Spread the batter in a greased 8 X 4 X 2ʺ loaf pan. Bake at 350°F for about 1 hour. Cool for ten minutes and remove from pan.
Glaze: combine the lemon juice and sugar and pour over the bread.
