JUMBO RAISIN COOKIES

2 C raisins

1 C water

1 C butter

2 C white sugar

3 eggs, beaten

1 tsp. vanilla

4 C flour

1 tsp. baking powder

1 tsp. baking soda

1 tsp. salt

2 tsp. cinnamon

½ tsp. nutmeg

Bring the raisins & water to a boil and let cool.  Cream the butter and sugar.  Add the eggs, vanilla & cooled raisins to the butter mixture.  Combine the dry ingredients and add to the raisin mixture.  Chill the dough for about 1 hour.  Roll the dough into balls and place on parchment lined cookie sheets.  Bake at 350°F for about 15 minutes.
